Today is the opening day of Blogging from A to Z 30 Day Challenge (I’m #1366 btw : ) The idea is to pick a theme for the month of April and write a post daily (except Sundays) on that theme for the whole month. The trick is to follow the alphabetical order daily when completing a post. For example, the first day should be about something that starts with the letter A within your theme, the second day is B and so on. I picked Crowd Pleasing Appetizers and I’m so excited to share my letter A – Best Ever Artichoke and Spinach Dip with you!
Best Ever Artichoke and Spinach Dip
This dip is so cheesy and tasty, it’s mouth watering good! Ok, let’s get right to it.
You’ll need the following:
1 (8oz) package of cream cheese or whipped cream cheese (I prefer this, much easier to work with)
¼ cup sour cream
½ cup Romano cheese
¼ cup shredded mozzarella cheese
2 cloves of garlic, minced
¼ teaspoon of garlic salt
salt and pepper to taste
1 (14oz) can of artichoke hearts, drained and chopped (I couldn’t find this so I had to cook the artichokes from scratch)
½ cup frozen chopped spinach – thawed and drained
- Preheat oven to 350F. Lightly grease a small baking dish
- In a medium bowl, mix together cream cheese, sour cream, Romano cheese, mozzarella cheese, garlic, garlic salt, salt and pepper to taste:
Then gently stir in artichoke hearts and spinach.
Transfer the mixture to the prepared baking dish.
Bake in the preheated oven for 35 minutes or until bubbly and lightly browned
It goes perfectly with Baked Tortilla Chips (which I will post later on), nacho chips, pitas or sour dough. Best to eat it while it’s warm, then again, it taste so good that there won’t be any left for it go go cold ; )
